Capsaicin (cap-say-uh-sin) is the hot part of the chili pepper. It can be extracted and just like pure alcohol or pure caffeine it needs to be treated with great care. These products are NOT TO BE INGESTED NEAT AND MUST BE DILUTED BEFORE USE. They are great for adding heat to a recipe but be careful - it's easy to over do it! All Pepper Extracts are not created Equal!
I spoke with David Ashley at Mad Dog as I was concerned about the validity of cheaper extracts on the market. All Mad Dog extracts are HPLC certified. High-performance liquid chromatography (or High pressure liquid chromatography) is a process used frequently in biochemistry and analytical chemistry to separate, identify, and quantify compounds i.e get the hot sh*t out of the chili!!
Pure pepper extracts generally come as a paste and cannot be packed as a liquid. They have to heat the 5 million just to get it in the bottle. People may claim high Scoville units but I bet if HPCL tests where run none would get close to what we sell. As a note the 5 million is so thick - to get more than a tip on a tooth pick you have to heat the bottle to get it to pour!
