A portion of bottle sales helps to fund research and education at the Chile Pepper Institute - where spiciness is a religion. The chile heat in this sauce comes from Bhut Jolokia, a chile pepper from India tested by Dr Paul W. Bosland (New Mexico State University, Las Cruces NM) and measured at 1 million Scovile Heat Units.
Now this is an interesting one! I'm so used to trying very hot Naga sauces that don't have all that much depth of flavour....not so with this one. Cajohn's has fused the heat of the Naga with lemon and garlic creating a sauce that gives plenty of flavour up front and a very good kick of Naga heat following on. Prepare to be impressed!
