Danger! Pure Pepper Extracts

Capsaicin (cap-say-uh-sin) is the hot part of the chili pepper. It can be extracted and just like pure alcohol or pure caffeine it needs to be treated with great care. These products are NOT TO BE INGESTED NEAT AND MUST BE DILUTED BEFORE USE. They are great for adding heat to a recipe but be careful - it's easy to over do it! One speck in a big bowl of chilli will do the job.
